    Hi Liz, I just discovered your site and LOVE it! Thank you for sharing your knowledge! Can you answer two questions, first, how many days out can I make a cake covered in fondant? I’m always so worried about it drying out. And second, last night I took a cake out (covered in fondant) of fridge to finish up and a shiny condensation
    covered the cake, any way to remedy that?

      I wouldn’t cover a cake more than three days in advance from when you are going to serve it because the cake will get stale.
      Condensation does not hurt the cake. Just keep decorating or put a fan on it to get it to dry faster.
